Recipes

I've never prided myself in my cooking abilities.
Baking?
Sure!
I can make some awesome desserts, but that is zero help when it comes to eating healthy.
I'm definitely over the "I guess since I'm eating healthy I'll eat plain chicken with a side of broccoli."
Surely there have to be meals that are delicious and nutritious!
Haha I hate that phrase, but it's true.
I'm lactose intolerant, so I'm trying to stay away from dairy and I don't eat a lot of red meat either.
I have never followed the dairy free diet, but I am always having stomach problems so it's time to stop being a dumbdumb and treat my body better!
So, here is where you come in.
I would L.O.V.E. it if you would help a sista out and throw me a recipe or 2!
I'll even post it on here and give credit to you for the wonderful meal.
;)
Ready......
GO!

XOXO

  1. Okay, so I have one that is absolutely amazing and SO good for you.

    You will need:

    1 lb Ground Turkey
1 medium sized Spaghetti Squash (roasted)
    1 Red Bell Pepper
    1 Jalapeno
    7 oz can Corn
    8 oz black beans (rinsed)
    1 TBS cumin
    1 tsp garlic salt
    salt and pepper to taste

This is easy peasy: roast your spaghetti squash in the oven. While it's cooling, brown the ground turkey--adding the cumin, garlic salt, pepper, and jalapeno. When turkey is no longer pink add the corn and the black beans to the mixture and allow to heat through. Shred the squash until it's a spaghetti like texture. Serve the meat mixture on top of squash.

  2. I'd google anything Paleo Diet oriented. SOOOO good and no dairy, gluten, sugars, etc.

This is one of my absolute favorite meals-- I make it with a side of roasted asparagus with olive oil brushed on it then sea salt and pepper. baked 15 minutes at 400.

    Sun Dried Tomato Chicken Bake
    Sun Dried Tomato Chicken Bake

2 lbs boneless skinless chicken breasts cut in half (I used the organic free range chicken breast tenders from Trader Joe’s)

8.5oz jar of julliane cut sun dried tomatoes

    8 garlic cloves, sliced thin

    2 tablespoons dried basil

Sea salt and black pepper to taste

Preheat oven to 375. Place the chicken breasts in a large glass baking dish. Sprinkle with the dry spices and mix well. Sprinkle the sliced garlic on top and spread the sun dried tomatoes and the olive oil that it’s in the jar over the entire dish. Seal tightly with tin foil and bake for 20 minutes. Remove the tin foil and bake for another 15 minutes or until the chicken is no longer pink in the middle.

  3. I don't know if you've ever looked at the "Tried & True Recipes" page on my blog (it's at the top, toward the right) but you should check it out! I do use a LOT of cheese because I LOOOOVE it haha, but most of the recipes on there you could probably leave the cheese out, no problem.
